Question 3

Question 3 was candidates' strength. Part (b) and (c) of the question were well answered however, the (a) part which was on buffet service was misinterpreted to be cocktail.

Observation

The expected answers are:

(a)(i)Buffet service: It is a food service to entertain large number of guests.
Dishes are usually set out on the buffet table and guests serve themselves.

Note: Key words to look for are underlined

(ii)Guidelines for Buffet Service

-Provide variety of foods and drinks for guests.
-Provide enough comfortable chairs and side stools or tables for guests.
-Arrange tables attractively
-Provide enough plates and cutlery appropriate for the service.
-Place everything within easy reach of the guests.
-Provide enough space for guests to walk round to help themselves and sit where they like;
-Provide soft background music;
-Provide sufficient quantity of foods and drinks for guests

(b)Practices of Good Manners

-Sit upright at the dinning table. Do not lean on the table;
-Do not hurry over meal, eat slowly;
-Do not put too much food into the mouth at a time;
-Chew your food noiselessly;
-Do not talk with foods in the mouth
-Close the mouth while chewing food.
-Use the cutlery correctly.
-Do not pick teeth with finger nails. Use tooth pick decently.
-Do not stretch your hand over another person’s food
