Observation

Generally question one was a popular question and was attempted by almost all the candidates and they scored well. However part (b) (ii) was mistaken for factors to consider when planning meals.        

The expected answers to the questions are:

  1. Deficiency disease of food nutrients

Iodine

    

    1. Goitre
    2. Poor growth in infants
    3. General poor health in pregnancy
    4. Mental retardation.

           

 

Calcium

 

    1. Retarded growth
    2. Ricket in infants and osteomalacia in adult
    3. Osteoporosis
    4. Irregular heart beat or abnormal clotting of blood
    5. Poor quality teeth
    6. Serious bleeding from slight injury.

 

Flourine

 

    1. Weak bones
    2. Dental Carriers or dental decay
    3. Loss of appetite

 

Fats and oil

 

    1. Bone weakness
    2. Dry skin
    3. Poor absorption of fat soluble vitamins
    4. Poor health

 

Protein

 

    1. Anaemia
    2. Kwashiorkor
    3. Poor growth
    4. General health impairment

(b)    (i)       Functions of carbohydrates
                   -     Supplies heat and energy.
                   -     Adds bulk to the diet.
                   -     Spares protein.
                   -     Adds variety and flavour to the diet.
                   -     Assist in the complete oxidation of fats and oil.
                   -     Regulate body processes.
                   -     Prevent constipation – fibre in carbohydrate.
